Lighter Buffalo Chicken Meatballs
INGREDIENTS:
- 16 oz of organic ground chicken
- 3 tablespoon fresh chives
- 1/2 teaspoon onion powder
- 1/4 teaspoon cracked pepper
- 1/8 teaspoon salt
- 3/4 cup panko
- 1/2 cup of hot sauce plus 2 tablespoons
- 1 large egg
PROCESS:
- In a large bowl combine ground chicken, fresh parsley, onion powder, pepper, salt, panko, 2 tablespoons of hot sauce and egg.
- Combine ingredients together gently with your hands to avoid over mixing.
- Form meatballs about 1.5 inches big. (approximately a little larger than a golf ball)
- Place meatballs on a parchment lined baking pan.
- Drizzle with olive oil.
- Bake at 350 for 20 minutes.
- In a sauté pan add 1/2 cup of hot sauce 1 tablespoon of olive oil.
- Toss meatballs in sauce for a few minutes...serve warm!
