Lighter Buffalo Chicken Meatballs

Spice up your Healthy Weeknight Meals, with Lighter Buffalo Chicken Meatballs!! Perfect with salad, brown rice and veggies! Leftovers make an awesome Buffalo Chicken Pizza...but then again, I turn all leftovers into pizza or quesadillas!! Enjoy! XO


Lighter Buffalo Chicken Meatballs

INGREDIENTS:
  • 16 oz of organic ground chicken
  • 3 tablespoon fresh chives
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cracked pepper
  • 1/8 teaspoon salt
  • 3/4 cup panko
  • 1/2 cup of hot sauce plus 2 tablespoons
  • 1 large egg
PROCESS:
  1. In a large bowl combine ground chicken, fresh parsley, onion powder, pepper, salt, panko, 2 tablespoons of hot sauce and egg.
  2. Combine ingredients together gently with your hands to avoid over mixing.
  3. Form meatballs about 1.5 inches big. (approximately a little larger than a golf ball)
  4. Place meatballs on a parchment lined baking pan.
  5. Drizzle with olive oil.
  6. Bake at 350 for 20 minutes.
  7. In a sauté pan add 1/2 cup of hot sauce 1 tablespoon of olive oil.
  8. Toss meatballs in sauce for a few minutes...serve warm!
