INGREDIENTS:
- 16 oz of organic ground chicken
- 1 clove of garlic minced
- 1/2 cup of unseasoned breadcrumbs
- 1 large egg
- 1/2 teaspoon cracked pepper
- 1/4 teaspoon onion powder
- 1 tablespoon low sodium soy sauce
- 2 scallions finely chopped (reserve some for garnish)
- 1 tablespoon of olive oil
- 1 tablespoon sesame seeds
PROCESS:
- In a large bowl combine ground chicken, 1 clove of minced garlic, onion powder, pepper, salt, unseasoned breadcrumbs, 1 tablespoons of soy sauce, egg, 1 tablespoon of olive oil, and chopped scallions.
- Combine ingredients together gently with your hands to avoid over mixing.
- Form meatballs about 1.5 inches big. (approximately a little larger than a golf ball)
- Place meatballs on a parchment lined baking pan.
- Bake at 350 for 20 minutes.
Brown Sauce
INGREDIENTS:
- 2 cloves of garlic minced
- 2 tablespoons low sodium soy sauce
- 1/4 cup light brown sugar
- 2 tablespoon olive oil
- 1/4 teaspoon cracked pepper
PROCESS:
- In a sauté pan heat 2 tablespoons of olive oil, soy sauce, brown sugar, garlic and pepper.
- Bring to a light boil and reduce heat to a simmer.
- Toss meatballs in the sauce and simmer a few minutes on low heat.
- Sprinkle with scallions and sesame seeds.
- Serve with steamed broccoli and rice.
