Lighter Chicken Meatballs & Broccoli in Brown Sauce!

This is how an Italian makes Chinese Food! Chicken "Meatball" and Broccoli in Brown Sauce. Yumm! The perfect healthy weeknight meal in under an hour.

Chicken Meatballs
INGREDIENTS:
  • 16 oz of organic ground chicken
  • 1 clove of garlic minced
  • 1/2 cup of unseasoned breadcrumbs
  • 1 large egg
  • 1/2 teaspoon cracked pepper
  • 1/4 teaspoon onion powder
  • 1 tablespoon low sodium soy sauce
  • 2 scallions finely chopped (reserve some for garnish)
  • 1 tablespoon of olive oil
  • 1 tablespoon sesame seeds
 
PROCESS:
  1. In a large bowl combine ground chicken, 1 clove of minced garlic, onion powder, pepper, salt, unseasoned breadcrumbs, 1 tablespoons of soy sauce, egg, 1 tablespoon of olive oil, and chopped scallions.
  2. Combine ingredients together gently with your hands to avoid over mixing.
  3. Form meatballs about 1.5 inches big. (approximately a little larger than a golf ball)
  4. Place meatballs on a parchment lined baking pan.
  5. Bake at 350 for 20 minutes.
Brown Sauce
INGREDIENTS:
  • 2 cloves of garlic minced
  • 2 tablespoons low sodium soy sauce
  • 1/4 cup light brown sugar
  • 2 tablespoon olive oil
  • 1/4 teaspoon cracked pepper
 
PROCESS:
  1. In a sauté pan heat 2 tablespoons of olive oil, soy sauce, brown sugar, garlic and pepper.
  2. Bring to a light boil and reduce heat to a simmer.
  3. Toss meatballs in the sauce and simmer a few minutes on low heat.
  4. Sprinkle with scallions and sesame seeds.
  5. Serve with steamed broccoli and rice.

I changed it up with a fresh stir-fry veggie mix and soba buckwheat noodles!
