Quick Roasted Tomatoes!!

Quick Roasted Tomatoes in 30 minutes...all the flavor of slow roasted tomatoes and no patience needed. Perfect for weeknight meals and busy cooks! 


INGREDIENTS:
  •  2 lbs assorted tomato medley
  • 4-6 garlic cubes
  • extra virgin olive oil
  • salt and pepper to taste
PROCESS:
  • Preheat oven to 400F
  • Half tomatoes and place on a parchment lined baking pan with the cut side facing up.
  • Place garlic around tomatoes randomly on pan.
  • Drizzle with olive oil and sprinkle lightly with salt and pepper.
  • Bake at 400F for 30 minutes.

(P.S. Here is a tip to make the most amazing pan pizza.  Make sure to let your dough rise twice.  Pre-Bake your dough in a 14in x 2in cake pan prepared with olive oil for 20 minutes at 400F.  Then add your sauce, cheese and toppings -- bake another 20 minutes at 450F.)
