Quick Roasted Tomatoes in 30 minutes...all the flavor of slow roasted tomatoes and no patience needed. Perfect for weeknight meals and busy cooks!
INGREDIENTS:
- 2 lbs assorted tomato medley
- 4-6 garlic cubes
- extra virgin olive oil
- salt and pepper to taste
PROCESS:
- Preheat oven to 400F
- Half tomatoes and place on a parchment lined baking pan with the cut side facing up.
- Place garlic around tomatoes randomly on pan.
- Drizzle with olive oil and sprinkle lightly with salt and pepper.
- Bake at 400F for 30 minutes.
