Spicy Baked Artichoke Hearts!

This is the perfect appetizer for a small cocktail party!  Crunchy spicy artichokes, that can easily be eaten in one bite.  I am warning these are addicting!

Spicy Baked Artichoke Hearts
 
INGREDIENTS:
  • 2 cans of 14oz artichoke hearts packed in water.
  • 1/2 cup white whole wheat flour
  • 1 cup panko breadcrumbs
  • 1 1/2 cups italian breadcrumbs
  • 1 tablespoon cayenne pepper
  • ½ tablespoon dried oregano
  • ½ teaspoon garlic powder
  • 1 large egg
  • 1 cup of skim or 1% milk
  • olive oil
  • sea salt and cracked pepper to taste


PROCESS:
  1. Drain and rinse the artichoke hearts -- then immediately toss them while still wet in the whole wheat flour.
  2. In a large shallow bowl or baking dish whisk egg and milk together.
  3. In small batches coat the floured artichokes in egg wash.
  4. In a large zip lock bag combine panko, bread crumbs, cayenne pepper, oregano and garlic powder.
  5. Drop small batches of artichokes in the bag and shake shake shake!
  6. Remove from breadcrumb mixture and arrange the artichokes in a single layer on a parchment lined baking pan.
  7. When all the artichokes have been coated with the breadcrumb mixture, drizzle with olive oil then gently turn, not to brush off too much of the coating. Drizzle again with olive oil on the opposite side.
  8. Sprinkle with salt and pepper to taste.
  9. Bake at 400F for 25-30 minutes flipping halfway.
  10. Serve with warm marinara sauce.
