Lighter Italian Meatball & Arugula Salad!


 
Italian Meatball and Arugula Salad...this could be the most delicious salad I have ever made...(I used a combination of organic turkey and lean ground beef for the meatballs.)

Filled with fresh veggies and full of flavor, this salad will keep everyone on track with their health resolutions!!

Meatballs

INGREDIENTS:
  • 1 pound lean organic ground turkey
  • 1 pound lean organic ground beef
  • 4 cups fresh spinach
  • 2 peeled and diced carrots
  • 2 large eggs
  • 2 slices of wholewheat bread
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 tsp ground pepper
  • olive oil

PROCESS:
  1. Preheat oven to 350F.
  2. In the food processor finely grind carrots and spinach with 2 tbs of olive oil.
  3. Remove mixture and pulse the two slices of wholewheat bread.
  4. In a large bowl combine ground turkey, ground beef, carrot and spinach mixture, wholewheat crumbs, eggs, and spices. (oregano, basil, salt, pepper, garlic powder)
  5. Combine ingredients together gently with your hands to avoid over mixing.
  6. Form meatballs about 1.5 inches big. (approximately a little larger than a golf ball)
  7. Place meatballs on a parchment lined baking pan and drizzle with olive oil.
  8. Bake at 350F for 20 minutes.

Arugula Salad

INGREDIENTS:
  • arugula
  • dried cranberries
  • walnuts
  • sliced red onion
  • 1 lemon
  • olive oil
  • shredded Pecorino Romano 
  • salt and pepper to taste

PROCESS:
  1. In a large bowl toss all salad ingredients together.
  2. Squeeze fresh lemon juice over the top, drizzle with olive oil, salt and pepper to taste.
  3. Place meatballs on top and sprinkle with cheese.
