Rustic Vegetarian Potato Leek Soup!

Creamy, Comfort and Classic, Potato Leek Soup is always delicious.  In this recipe I substitute cream or milk with almond milk.  In the winter, on a Sunday, you will always find a pot of soup simmering on my stove...and most likely in the Summer too -- unless of course, I am at the beach all day! XO

Vegetarian Split Pea Marsala Soup!!

To me, Peas and Marsala Wine just make sense as a flavor pairing, they're both sweet, earthy and delicious! I love making risotto with marsala wine and peas...so when I wanted to add something different and special to bring the flavors of my pea soup alive, marsala wine was my immediate go to!

I have said in earlier posts, I eat soup almost everyday for lunch during the school year. Therefore, I am constantly trying to come up with new ideas and fresh spins on the classics. This recipe is sure to please and sooooo easy to make! Enjoy! XO Jessica

White Bean Orzo Soup w/ Lemon & Ginger!

I have written in prior posts that I eat soup for lunch at least three days a week.  It is easy to prepare and you can make a large batch in one pot, which therefore turns into a lot of individual lunch servings for your freezer.  White bean and orzo soup is one of my favorites, but I wanted to freshen up the flavor a bit.  I decided to add lemon and ginger, which added an extra brightness and freshness to the recipe during these dull winter months.  What I love most about this soup, is that it is super easy and very quick to make.  It only needs about an hour to cook.  Enjoy!

Red Lentil Cilantro Soup!!


I eat soup almost every other day for lunch. I make up large batches and freeze individual servings for me and my husband as quick portable lunches. We defrost them as needed and it is sooooo much healthier than can soups. Red Lentil is my favorite with Black Bean and Spinach Lemon Orzo coming in tied for second.

Somehow, I always seem to make a large batch of Red Lentil Soup every time it snows! I found that adding cilantro brings such a fresh vibrant flavor to the slow cooked ingredients of this recipe. I hope you enjoy it as much as me!
