White Bean & Salsa Verde Baked Empanadas!

Here is a great recipe to add to your Meatless Monday Menu! Creamy white bean, spicy salsa verde, garlic and a crust made with coconut oil...(thanks to wholefoods.com for the crust recipe). Delicious can be healthy! Double the recipe and make these empanadas in large batches to be frozen for later! They will last in the freezer for up to 4 weeks and maintain freshness. In this recipe I do not include cheese, but some queso fresco would be a yummy option! Enjoy! XO Jessica

Cilantro Arugula Walnut Pesto!!

Pesto is an amazing sauce and there are so many different leafy greens and nuts, that you can mix together to change it up! Here is on of my favorite pesto recipes. The arugula and cilantro create a very strong flavor, so a little goes a long way...which is a good thing! Perfect on pasta, pizza, chicken, in meatballs, on fish...basically anything! Baked Avocado, Black Bean, & Corn Egg Rolls!

Meatless Monday -- I posted these egg rolls on my Instagram account a week ago, and I have been getting great feedback and many questions about how to make them.  I have posted the recipe below with wrapping instructions.  Here are a few quick tips...read the directions on the egg roll wrapper package carefully before assembling.  Also, do not overfill the egg rolls before folding.  You can find egg roll wrappers in the fresh section of most supermarkets!  These baked egg rolls are so delicious, I really hope you give this recipe a try!! Honey Balsamic Brussels Sprouts!!

Honey Balsamic Brussels Sprouts are a perfect side dish for any main course. These yummy sweet and savory bites are delicious on white pizza too! Seriously try it!
Honey Balsamic Brussels Sprouts
 
INGREDIENTS:
  • Pound of fresh Brussels Sprouts
  • Olive Oil
  • Balsamic Vinegar
  • Honey
  • Sea Salt
  • Pepper
  • Garlic Powder
PROCESS:
  1. Slice brussels sprouts in half. Drizzle olive oil, honey and balsamic vinegar over the cut sprouts.
  2. Add sea salt, garlic powder and pepper.
  3. Toss together to evenly coat.
  4. Cook in oven at 400F degrees for approx 30 minutes.
  5. Drizzle with honey before serving....mmmmm...delicious!
