INGREDIENTS:
- 1 large head of cauliflower, finely ground
- 1 cup of scallions, diced
- 1 cup of sweet peppers diced
- 1 cup panko (optional)
- 4 eggs
- 3 cups shredded colby jack cheese
- 2 tablespoons fresh garlic chopped (4 cloves)
- salt and pepper
- 1 cup finely ground bread crumbs for coating
PROCESS:
- Use a food processor or blender grind up cauliflower, peppers and garlic.
- In a large bowl combine cauliflower, peppers, garlic, panko, eggs, cheese, scallions, salt and pepper.
- Use your hands to mix and shape mixture into nuggets.
- On a flat plate spread out bread crumbs -- individually coat nuggets.
- Line baking sheet with parchment paper, drizzle with extra virgin olive oil and lay cakes out on the pan. Drizzle the top of the nuggets with olive oil.
- Bake for 30-45 minutes at 400F -- Flip halfway.
