Candied Orange Slices with Salted Dark Chocolate!


Orange and Chocolate are one of the best flavor combinations to ever meet. Does anyone remember the Orange Chocolate Frappuccino from Starbucks many years ago?!?! That was my favorite! This recipe calls upon those flavor elements but in a more sophisticated presentation. Candied orange slices are perfect for a special treat, occasion, gift...or just to enjoy!!

The first time I tried to make candied citrus, I did a combination of oranges and grapefruit. It did not work out. It was very bitter and the fruit needed different cook times. I kept it simple with this recipe and kept it to good ingredients. Organic navel oranges taste like candy before the candy process. I take the extra step of blanching the oranges whole to take any tartness out of the skin. This is seriously the most amazing fruit dessert ever!

Candied Orange Slices with Salted Dark Chocolate!
 
INGREDIENTS:
  • 3 cups water
  • 2 cups sugar
  • 3 navel oranges
  • course sea salt
  • 1 1/2 cups dark chocolate baking chips melted
PROCESS:
  1. Bring whole oranges to a boil in a large sauce pan for 5 minutes. Remove -- change water and repeat process.
  2. Remove oranges and let cool. Once cooled slice oranges about 1/4 in thick.
  3. In a large, heavy saucepan, bring water and sugar to a boil. Add orange slices and cook over medium heat until translucent, turning occasionally, for 60 minutes until orange slices are soft with a glassy appearance, but still intact.
  4. Use a slotted spoon to remove the oranges from the syrup and transfer to a cooling rack placed over a baking sheet lined with parchment paper.
  5. Allow the oranges to cool and firm up a for 12-24 hours.
  6. Dip oranges in melted dark chocolate and place on a parchment lined baking pan. -- sprinkle with sea salt.
  7. Candied orange slices can be store up to 3 weeks in the refrigerator. Just layer the slices between pieces of parchment paper in a plastic storage container. You can also freeze the orange slices before dipping in chocolate.
 

To make simple syrup with the left-over liquid in the pan, reduce heat to medium-low and simmer syrup for about 15 minutes more or until syrup is thick. Store in the refrigerator.
