Lighter Blueberry Tea Biscuit Scones!!

Lighter Blueberry Tea Biscuit Scones...perfect for my evening tea...perfect for my baby's breakfast!

Lighter Blueberry Tea Biscuit Scones
 
INGREDIENTS:
  • 2 cups of white whole wheat flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon vanilla salt            
  • 6 tablespoons sugar
  • 1 stick of organic unsalted butter
  • 1 large organic egg
  • 1 tablespoon vanilla extract
  • 1/2 cup organic 1% milk
  • 1 cup fresh organic blueberries

PROCESS:
  1. Preheat oven to 375F
  2. Cut the butter into 1/4 inch cubes.
  3. In your mixing bowl add flour, salt, baking powder and sugar. into a large bowl. Add cubed butter into the stand mixer and use the whisk attachment on low to cut the butter in.
  4. Whisk the egg, milk and vanilla together and remove 3 table spoons to brush on top once shaped. Stir remainder of wet mix into the dry ingredients until just mixed.
  5. Dump the dough onto a floured surface and knead in the blueberries gently. Pat into a 8" circle.
  6. Cut into 8 pie shaped slices and place pieces on a parchment paper lined cookie sheet.
  7. Brush the three tablespoons of egg wash on the top of each scone. Sprinkle sugar on top. Bake for 16-20 minutes, or until golden brown!

  2. Hi Cathy! Thanks so much and I can't wait to hear how they come! I infused sea salt in a jar with the pod of a vanilla bean! It is awesome for baking! Just fill a mason jar with coarse salt and let it sit a few days...the longer the better! If you want to make them right away just use regular sea salt. xo Jess
