Baked Green Bean Fries are healthy food Heaven! This is definitely my favorite healthy junk food?!
- 1 pound of fresh organic green beans
- 2 cups whole wheat flour
- 1 cup panko breadcrumbs
- 1 1/2 cups italian breadcrumbs
- 1 large egg
- 1 cup of skim or 1% milk
- olive oil
- sea salt and cracked pepper to taste
PROCESS:
- Wash and drain green beans then immediately toss them while still wet in the whole wheat flour.
- In a large shallow bowl or baking dish whisk egg and milk.
- In small batches coat the floured green beans in egg wash.
- In a large ziplock bag combine panko and bread crumbs.
- Drop small batches of green beans in bag and shake shake shake!
- Remove from breadcrumb mixture and arrange the green beans in a single layer on a parchment lined baking pan.
- When all the green beans have been coated with the breadcrumb mixture, drizzle with olive oil then gently turn, not to brush off too much of the coating. Drizzle again with olive oil on the opposite side.
- Sprinkle with salt and pepper to taste.
- Bake at 400F for 25-30 minutes flipping halfway.
Serve with your favorite dipping sauce! I like low fat sour cream mixed with horseradish and pepper!! Mmm
