Made with LOVE...fresh strawberry tea bread!!

Celebrate National Tea Month with me and bake this delicious strawberry tea bread!  This is the perfect dessert to make for your sweetheart or enjoy in the afternoon with a good cup of tea. Fresh berries make this loaf absolutely stunning when you slice into it...which also makes it perfect for my favorite baking holiday coming up! Valentine's Day!


Fresh Strawberry Tea Bread
 
INGREDIENTS:
  • 1 cup butter or margarine, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries chopped
  • 2 tablespoons turbinado sugar
PROCESS:
  1. Preheat oven to 325f.
  2. Butter a 10 inch tube pan and coat with white sugar.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla.
  4. Reserve 1/4 cup of flour for later, and mix together the remaining flour, baking powder and salt. Gradually stir into the creamed mixture.
  5. Use the reserved flour to coat the chopped Strawberries, then fold the floured strawberries into the batter. Spread evenly into the prepared pan.
  6. Sprinkle the top with a turbinado sugar.
  7. Bake for 60 to 70 minutes at 325f or until a toothpick inserted into the cake comes out clean.
  8. Allow cake to cool in the pan for 10 minutes, before inverting onto a wire rack to cool completely.
