INGREDIENTS:
- 2 cups plain greek yogurt
- 1 seedeless cucumber unpeeled and diced
- zest of 1 lemon
- 1 tbs of lemon juice
- 2 garlic cloves
- 1/2 teaspoon cracked peper
- 1/2 teaspoon coarse salt
- 1/2 teaspoon dried dill
- 1 tablespoon of olive oil
PROCESS:
- Add garlic cloves and cucumber to the blender. Pulse until roughly chopped.
- Add greek yogurt, lemon zest, lemon juice, pepper, salt, dill and olive oil -- blend until all ingredients are completely combined.
- Store in small jars in the refrigerator. Keeps for up to a week.
