Cucumber Dill Greek Yogurt Dressing!

  
This dressing is so healthy and refreshing you will be covering, dipping and tossing everything you eat all week with it! Greek yogurt is such a great base for so many dressings, dips and sauces because of the tangy flavor it brings to recipes!
 
Cucumber Dill Greek Yogurt Dressing
 
INGREDIENTS:
  • 2 cups plain greek yogurt
  • 1 seedeless cucumber unpeeled and diced
  • zest of 1 lemon
  • 1 tbs of lemon juice
  • 2 garlic cloves
  • 1/2 teaspoon cracked peper
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon dried dill
  • 1 tablespoon of olive oil

PROCESS:
  1. Add garlic cloves and cucumber to the blender.  Pulse until roughly chopped.
  2. Add greek yogurt, lemon zest, lemon juice, pepper, salt, dill and olive oil -- blend until all ingredients are completely combined.
  3. Store in small jars in the refrigerator.  Keeps for up to a week.

Serve with chicken, on pasta, with veggies and pitas, on salad....the possibilities are endless!
