Heart Healthy Applesauce Oatmeal Raisin Cookies!!

Imagine a cookie that removes bad cholesterol from your body, protects against heart disease, provides high levels of fiber, low levels of fat, and high levels of protein…well you do not need to imagine this cookie anymore. Here is the recipe to a heart healthy oatmeal cookie that you can feel good about eating! Oh and by the way…I forgot to mention how delicious these cookies taste too! XO Enjoy


Heart Healthy Applesauce Oatmeal Raisin Cookies

INGREDIENTS:
  • 1 cup white whole wheat flour
  • 2 cups old fashioned oats
  • 1 cup light brown sugar
  • 1 teaspoon almond extract
  • 1 teaspoon cardamom
  • 2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 large egg
  • ½ cup apple sauce
  • 1 tablespoon coconut oil or light olive oil
  • 3/4 cup yogurt chips or white chocolate chips
  • 3/4 cup golden raisins

PROCESS:
  1. Preheat oven to 350F
  2. Mix all dry ingredients together in mixer. Once combined add 1 large egg, oil and apple sauce mix together until almost combined.  Add yogurt chips and raisins -- combine with mixer on medium speed.  -- do not over mix.
  3. Drop by rounded tablespoon onto a parchment lined baking sheet. Bake at 350 degrees for 12 to 15 minutes.
  4. Let cookies sit 5 minutes before moving to a drying rack to completely set.

Great additions to this recipe:
  • ½ cup dried cranberries
  • ½ cup raw coconut
  • ½ cup chopped almonds
