Heart Healthy Applesauce Oatmeal Raisin Cookies
INGREDIENTS:
- 1 cup white whole wheat flour
- 2 cups old fashioned oats
- 1 cup light brown sugar
- 1 teaspoon almond extract
- 1 teaspoon cardamom
- 2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 large egg
- ½ cup apple sauce
- 1 tablespoon coconut oil or light olive oil
- 3/4 cup yogurt chips or white chocolate chips
- 3/4 cup golden raisins
PROCESS:
- Preheat oven to 350F
- Mix all dry ingredients together in mixer. Once combined add 1 large egg, oil and apple sauce mix together until almost combined. Add yogurt chips and raisins -- combine with mixer on medium speed. -- do not over mix.
- Drop by rounded tablespoon onto a parchment lined baking sheet. Bake at 350 degrees for 12 to 15 minutes.
- Let cookies sit 5 minutes before moving to a drying rack to completely set.
Great additions to this recipe:
- ½ cup dried cranberries
- ½ cup raw coconut
- ½ cup chopped almonds
