Spicy Peanut Soba Noodles w/veggies and ground chicken
INGREDIENTS:
- 1 package of soba noodles (prepared according to package)
- 16 oz. of organic ground chicken
- 1 bell pepper, sliced
- 1 medium zucchini, chopped
- 2 cups of broccoli florets
- 1 carrot, coined
- 1 cup sugar snap peas
- ¼ cup crushed raw peanuts
- 2 scallions, chopped
- olive oil
- ground pepper, to taste
- garlic powder, to taste
- 2 tablespoons creamy peanut butter
- 3 tablespoons low sodium soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons light brown sugar
- 1 teaspoon dried red pepper flakes
- ½ teaspoon fresh ground black pepper
- 4 large garlic cloves
PROCESS:
- Cook soba noodles according to directions on package in a large pot or dutch oven. Remove and rinse noodles in cold water.
- Coat the bottom of the same large pot or dutch oven with olive oil -- bring the heat to medium- high. Add ground chicken, garlic powder and black pepper. Sauté and break up ground chicken until cooked. (approx. 7-9 minutes) Remove from pot and set aside.
- In the same large pot add ¼ cup of water and 3 tablespoons of olive oil -- add all of the vegetables and sprinkle with garlic powder. Bring the heat to medium -- put the lid on the pot with a slight air opening. Simmer until all water has evaporated and vegetables are tender. (approx. 10 minutes)
- While the vegetables are steaming add all of the ingredients for the sauce into the blender or food processor and mix until smooth and emulsified.
- In a large serving bowl add noodles, vegetables, chicken and sauce. Toss all of the ingredients together. Top with chopped scallions and crushed raw peanuts. Serve warm or cold.
