Strawberries and Avocados are a delicious match for a healthy and filling main course dinner or lunch salad! This easy dinner salad is perfect for the spring and summer. It is refreshing and light and the lemon vinaigrette recipe can be used on so many other salads and grilled veggies! What I love most about this salad is that it taste good, while keeping your fitness and health goals on track! Just add chicken or fish to complete this healthy weeknight meal!
INGREDIENTS:
- 2 cups of kale
- 2 cups of fresh baby spinach
- 1 head of romaine lettuce chopped
- 1 avocado diced
- 1 cup of strawberries, diced
- 2 scallions, chopped
- 1/3 cup pecans, chopped
- juice of 1 lemon
- 4 tablespoons extra virgin olive oil
- sea salt
- pepper
- garlic powder
PROCESS:
- In a large bowl combine kale, spinach and romaine lettuce.
- Layer diced avocado, strawberries, pecans and scallions.
- in a small bowl whisk together lemon juice, lemon zest, extra virgin olive oil, salt, pepper garlic powder. -- whisk until emulsified.
- Drizzle over salad and sprinkle with extra pepper to taste.
- Add grilled chicken or fish for a complete week night meal!
