Steel Oats Breakfast Cookies!

Cookies for breakfast…and heart healthy too! Who said cookies weren’t an acceptable breakfast?!...Not me or Maxwell. We are eating cookies all week for breakfast, and loving every healthy bite!  The steel oats give a crunchy crackle effect to the texture.  There is certainly no lose of flavor and goodness with all of the healthy substitutions in this recipe.  Maybe the new saying will be "a cookie a day......you can fill in the blank!"  Enjoy!


Steel Oats Breakfast Cookies
INGREDIENTS:
  • 1 ½ cups white whole-wheat flour
  • 1 ½ cups organic steel oats
  • ½ cup light brown sugar
  • 1 tablespoon agave syrup 
  • 1 teaspoon vanilla extract
  • 1 teaspoon cardamom
  • 2 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ½ teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 large egg
  • ½ cup unsweetened apple sauce
  • 1 tablespoon of coconut oil
  • 1 cup of carob chips
PROCESS:
  1. Preheat oven to 350F.
  2. Mix all dry ingredients together in mixer. Once combined add 1 large egg, apple sauce, vanilla extract and coconut oil. Mix until almost combined – add carob chips, combine with mixer on medium.
  3. Drop rounded tablespoon onto a parchment lined baking sheet. Bake at 350 degrees for 12 to 15 minutes.
  4. Let cookies sit 5 minutes before moving to a drying rack to completely set.
