While I was food shopping I came across a mixture of super greens. So of course I bought it...and this is what it evolved into in my kitchen! I love turning any recipe into a mini size and could live my life just eating finger foods at every meal. These mini quiches are great for breakfast, brunch or a party appetizer! Enjoy!
INGREDIENTS:
- 2 cups of chopped chard, kale, and spinach
- 3 large organic eggs
- 4 tbs of 2% organic milk
- 6 tablespoon shredded organic cheese
- salt, pepper, garlic powder
- olive oil
- pie crust
- 4 eggs
- 2 egg whites
- 1/2 cup of 2% milk
- 6 cups of super greens
- 1 cup of shredded cheese
PROCESS:
- Preheat your oven to 350F
- Sauté super greens with a drizzle of olive oil,salt, pepper and garlic powder. Remove from heat once the greens have started to wilt.
- In a medium size bowl, whisk eggs and milk, add cooled greens and cheese. Mix together and place in the fridge.
- Roll out pie dough and cut 24 circles with circle biscuit or cookie cutter. (Approx 3.5 inches)
- Fit circled into a mini muffin pan and spoon mixture into mini pie crust. Sprinkle with fresh cracked pepper.
- Bake at 350F for 13-15 minutes. Let cool and remove from pan.
