SUPER GREENS mini quiches!


While I was food shopping I came across a mixture of super greens. So of course I bought it...and this is what it evolved into in my kitchen! I love turning any recipe into a mini size and could live my life just eating finger foods at every meal. These mini quiches are great for breakfast, brunch or a party appetizer! Enjoy!
 
SUPER GREENS mini quiches!
 
INGREDIENTS:
  • 2 cups of chopped chard, kale, and spinach
  • 3 large organic eggs
  • 4 tbs of 2% organic milk
  • 6 tablespoon shredded organic cheese
  • salt, pepper, garlic powder
  • olive oil
  • pie crust
For one large Quiche make the following substitutions and adjustments!
  • 4 eggs
  • 2 egg whites
  • 1/2 cup of 2% milk
  • 6 cups of super greens
  • 1 cup of shredded cheese

PROCESS:
  1. Preheat your oven to 350F
  2. Sauté super greens with a drizzle of olive oil,salt, pepper and garlic powder. Remove from heat once the greens have started to wilt.
  3. In a medium size bowl, whisk eggs and milk, add cooled greens and cheese. Mix together and place in the fridge.
  4. Roll out pie dough and cut 24 circles with circle biscuit or cookie cutter. (Approx 3.5 inches)
  5. Fit circled into a mini muffin pan and spoon mixture into mini pie crust. Sprinkle with fresh cracked pepper.
  6. Bake at 350F for 13-15 minutes. Let cool and remove from pan.
