Lavender Vanilla Cookies...for your sweetheart!

Throughout history, lavender has been linked to romance and love, which makes these cookies an excellent treat to make for your Valentine!

Lavender Vanilla Cookies!
 
INGREDIENTS:
  • 1 1/2 sticks of unsalted butter, room temperature
  • 3/4 cup of sugar
  • 2 teaspoons of vanilla extract
  • 2 1/2 cups of flour
  • 1/2 teaspoon vanilla salt (or plain salt)
  • 2 teaspoons of dried culinary lavender, roughly chopped
  • 1 cup white baking chips
  • extra lavender for decoration

PROCESS:
  1. Beat together butter sugar egg and vanilla with an electric mixer on high until pale and fluffy.
  2. Reduce speed to low and add flour, salt, and lavender, mixing until just combined.
  3. Remove dough from bowl and roll into a log shape with parchment paper.
  4. Chill in the refrigerator for an hour our overnight.
  5. Preheat oven to 350F.
  6. Slice cookies approx 1/4 of an inch thick.
  7. Place on a parchment lines baking sheet, about 1 inch apart.
  8. Bake 10-12 minutes.
  9. Let cookies cool.
  10. Melt white chips on 15 minute intervals in a heat safe bowl.
  11. Once melted, dip cookies halfway and place back on parchment lined baking sheet.
  12. Sprinkles with lavender and let chocolate set.
 
Cookies not yet dipped in chocolate can be frozen for up to one month!!
