Lavender Vanilla Cookies!
PROCESS:
INGREDIENTS:
- 1 1/2 sticks of unsalted butter, room temperature
- 3/4 cup of sugar
- 2 teaspoons of vanilla extract
- 2 1/2 cups of flour
- 1/2 teaspoon vanilla salt (or plain salt)
- 2 teaspoons of dried culinary lavender, roughly chopped
- 1 cup white baking chips
- extra lavender for decoration
PROCESS:
- Beat together butter sugar egg and vanilla with an electric mixer on high until pale and fluffy.
- Reduce speed to low and add flour, salt, and lavender, mixing until just combined.
- Remove dough from bowl and roll into a log shape with parchment paper.
- Chill in the refrigerator for an hour our overnight.
- Preheat oven to 350F.
- Slice cookies approx 1/4 of an inch thick.
- Place on a parchment lines baking sheet, about 1 inch apart.
- Bake 10-12 minutes.
- Let cookies cool.
- Melt white chips on 15 minute intervals in a heat safe bowl.
- Once melted, dip cookies halfway and place back on parchment lined baking sheet.
- Sprinkles with lavender and let chocolate set.
Cookies not yet dipped in chocolate can be frozen for up to one month!!
