Good for you too....Veggie Nachos!

If you are looking for a game-day appetizer that won't break your health resolutions you NEED to make these Veggie Nachos!! So yummy and filled with lots of veggies! I actually made them last weekend and again yesterday, because they are so delicious and my hubby loves them too!


Good for you food should taste good and look good too!! These veggie nachos are perfect for a quick weeknight dinner or an at home happy hour!


INGREDIENTS:
  • 4 cloves of garlic chopped
  • 1 yellow squash chopped
  • 1small red onion chopped 
  • 3/4 pound asparagus chopped
  • 1/2 cup kalamata olives sliced
  • 8 oz Colby Jack Cheese
  • Assorted organic corn chips
  • Salt and Pepper
 

PROCESS:
  1. Chop up all your vegetables.
  2. Pre-heat oven to 350F.
  3. Sauté veggies with olive oil on high in a sauté pan for 10 minutes.  Add salt and pepper to taste.
  4. Line a baking pan with parchment paper and add a layer of chips, cheese and veggies. Repeat the layer once.
  5. Bake in the oven for 15 minutes.
  6. Serve with salsa, guacamole and sour cream.
