With a passion for baking and love for pleasing, I created 25 Days of Cookies this year for the holidays. Each cookie was thoughtfully crafted to meet the flavor palate of my individual friends and family! This cookie was created for my husband!! Boozy, Sweet, and Salty...it doesn't get much better than this!
INGREDIENTS:
- 1/2 cup of butter (room temperature)
- 1 cups of sugar
- 1/2 cup of eggnog
- 1 shot of bourbon
- 2 3/4 cups of flour
- 1/2 teaspoon baking powder
- ¾ teaspoon ground nutmeg
- 1 bag of Hershey’s cinnamon baking chips
- coarse salt for sprinkling on top
PROCESS:
In a large bowl, cream butter and sugar until light and fluffy. Beat in eggnog. Combine flour, baking soda and nutmeg; gradually add to creamed mixture and mix until dough is formed. Shape into two 10-in. rolls; wrap each in plastic wrap. Refrigerate overnight.
Preheat oven to 350°. Unwrap and cut into 1/4-in. slices. Place 1 in. apart on parchment lined baking sheets. Bake 8-10 minutes or until set. Remove to wire racks to cool.
For the icing, in a large bowl, melt cinnamon chips. Dip cookies in melted chocolate and place on parchment paper to set. Sprinkle with coarse salt immediately.
