Soft and Chewy Red Velvet cookies all decked out for Christmas!!
INGREDIENTS:
- 2¼ cups all-purpose flour
- 2½ Tbsp cocoa powder
- 1½ tsp cornstarch
- ¾ tsp baking soda
- ½ tsp salt
- 12 Tbsp butter, at room temperature
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 eggs
- 1½ tsp white vinegar
- 1½ tsp vanilla extract
- 1 Tbsp red food coloring
- ¾ cup white chocolate chips, divided
- ¾ cup mini M&M's (Save some extra candies to sprinkle on the top)
PROCESS:
- Preheat oven to 350F degrees. In a mixing bowl, combine flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.
- In another mixing bowl or stand mixer, cream together the butter, granulated sugar and brown sugar about 3 minutes until fluffy. Add in one egg at a time and mix to combine. Add vinegar, vanilla, and food coloring and mix until just combined.
- Add in the dry ingredients until combined. Mix in white chocolate chips and mini M&M's.
- Line cookie sheets with parchment paper and roll cookie dough into balls. Press extra candies onto the top of each cookie dough ball.
- Bake for 8-9 minutes. You can freeze these cookies in air tight freezer bags for up to 1 month!
