Red Velvet Cookies!!

Soft and Chewy Red Velvet cookies all decked out for Christmas!!



INGREDIENTS:
  • 2¼ cups all-purpose flour
  • 2½ Tbsp cocoa powder
  • 1½ tsp cornstarch
  • ¾ tsp baking soda
  • ½ tsp salt
  • 12 Tbsp butter, at room temperature
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1½ tsp white vinegar
  • 1½ tsp vanilla extract
  • 1 Tbsp red food coloring
  • ¾ cup white chocolate chips, divided
  • ¾ cup mini M&M's  (Save some extra candies to sprinkle on the top)

PROCESS:
  1. Preheat oven to 350F degrees. In a mixing bowl, combine flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.
  2. In another mixing bowl or stand mixer, cream together the butter, granulated sugar and brown sugar about 3 minutes until fluffy. Add in one egg at a time and mix to combine. Add vinegar, vanilla, and food coloring and mix until just combined.
  3. Add in the dry ingredients until combined. Mix in white chocolate chips and mini M&M's.
  4. Line cookie sheets with parchment paper and roll cookie dough into balls. Press extra candies onto the top of each cookie dough ball.
  5. Bake for 8-9 minutes. You can freeze these cookies in air tight freezer bags for up to 1 month!
