Peppermint Swirl Sugar Cookies -- the easy way!!!
INGREDIENTS:
- 1 box of white cake mix
- 1 egg
- 1 stick of room temperature butter
- 1 tsp vanilla extract
- 1/2 tsp of peppermint extract
- Red food coloring gel
- 1/2 cup of crushed candy canes
- Combine all ingredients on low in a stand mixer, gradually increasing speed until cookie dough has formed.
- Drop in few drops of red food coloring and mix a few times until dough is swirled.
- Shape dough into a log and roll in crushed candy canes.
- Refrigerate for 1 hour.
- Cut dough into circles with a sharpe knife and bake at 350F for 12-14 minutes.
These must be baked on parchment paper so the candy cane does not burn or stick to your baking sheet.
