Chocolate Zucchini Spice Bundt Cake!

 

INGREDIENTS:
  • 3 eggs
  • 1 cup vegetable oil
  • 3 teaspoons vanilla
  • 2 cups zucchini grated
  • 2 cups sugar
  • 3 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoon pumpkin pie spice
  • 1 cup mini chocolate chips

PROCESS:
  1. Preheat oven to 350 degrees.
  2. In a bowl, combine eggs, vegetable oil, vanilla, zucchini and sugar. Mix together and set aside.
  3. In another bowl, mix together the remaining ingredients.
  4. Pour the wet mixture into the dry mixture and stir until combined. Be careful not to over-mix the batter.
  5. Spray Bundt Cake pan and dust with coco powder
  6. Pour the batter evenly in pan.
  7. Bake at 350 degrees for 55-60 minutes.
