Yummy, healthy and Maxwell approved! As a mom of a two year old, I am always looking for ways to sneak in those veggies and this recipe is a total success! These can be served with ketchup just like classic nuggets, with cheese and sauce or as mini sliders. I am obsessed with these yummy nuggets. I make up a batch every Sunday for the week!
Baked Broccoli Nuggets!
INGREDIENTS:
- 2-4 medium broccoli stalks finely ground
- 2 cups whole wheat Panko crumbs or 1/2 a 2 day old baguette food processed
- 4 eggs
- 2 cups shredded cheese
- 2 tablespoon fresh cilantro roughly chopped
- 2 tablespoons fresh flat-leaf parsley
- salt, pepper, garlic powder
- 1 cup italian bread crumbs for coating
PROCESS:
- Use a food processor or blender grind up broccoli.
- In a large bowl combine broccoli, panko, eggs, cheese, fresh herbs, salt, pepper, and garlic powder.
- Use your hands to mix and shape mixture into nuggets.
- On a flat plate spread out bread crumbs -- individually coat nuggets.
- Line baking sheet with parchment paper, drizzle with extra virgin olive oil and lay cakes out on the pan. Drizzle the top of the nuggets with olive oil.
- Bake for 25 - 30 minutes at 400F -- Flip halfway.
