INGREDIENTS:
- 1 1/2 cups flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup low-fat Greek yogurt
- 1 1/2 tbsp grated lemon zest
- 1 1/2 tbsp lemon juice
- 1/2 tsp vanilla
- 1 cup sugar
- 1/3 cup unsweetened applesauce
- 1 tbsp vegetable oil
- 1 whole egg
- 2 egg whites
- 1/3 cup blueberries
- 1/3 cup raspberries
PROCESS:
- In a small bowl, combine the sugar, egg, egg whites, oil, lemon juice, vanilla extract, applesauce and greek yogurt.
- Combine the flour, baking powder and salt; add to egg mixture and mix well.
- Pour half if the mixture into a greased and floured 5-3/4-in. x 3-in. x 2-in. loaf pan.
- Add a layer of blueberries and raspberries, then top with remaining mixture.
- Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
- Dust with confections sugar before serving! Yumm!
