Low-Fat Lemon Berry Pound Cake

 INGREDIENTS:
  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup low-fat Greek yogurt
  • 1 1/2 tbsp grated lemon zest
  • 1 1/2 tbsp lemon juice
  • 1/2 tsp vanilla
  • 1 cup sugar
  • 1/3 cup unsweetened applesauce
  • 1 tbsp vegetable oil
  • 1 whole egg
  • 2 egg whites
  • 1/3 cup blueberries
  • 1/3 cup raspberries

PROCESS:
  1. In a small bowl, combine the sugar, egg, egg whites, oil, lemon juice, vanilla extract, applesauce and greek yogurt.
  2. Combine the flour, baking powder and salt; add to egg mixture and mix well.
  3. Pour half if the mixture into a greased and floured 5-3/4-in. x 3-in. x 2-in. loaf pan.
  4. Add a layer of blueberries and raspberries, then top with remaining mixture.
  5. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  6. Dust with confections sugar before serving! Yumm!
