Jam Sandwiches!

This is definitely one of my favorite cookies! Easy to make and oh so impressive!! The combinations are endless. Pictured below is Fig and Strawberry with Dark Chocolate and Blueberry with White Chocolate! The beauty of this cookie is you can make it from scratch or with a little help...that's the secret to all of my recipes! Enjoy!!!
  



From Scratch...
 
INGREDIENTS:
  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 1/4 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 cup unsalted butter (2 sticks), at room temperature
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • Jam or Preserves

PROCESS: 
  1. In large bowl, whisk together the flour, baking soda, and salt. Set aside.
  2. Using an electric mixer, cream the butter and sugar until smooth. Add the egg and beat until fluffy, about 2 minutes. Beat in the vanilla.
  3. With the mixer on low, gradually add the flour mixture, mixing until just until dough is formed.
  4. Shape dough into1 inch dough balls and roll in sugar, lay on parchment lined baking pan and press fork into dough to create decorative lattice pattern.
  5. Heat oven to 350° F, and bake until just beginning to brown, 9 to 11 minutes.
  6. Once cookies have cooled spread jam in between two cookies and dip in melted chocolate and decorate with sprinkles.

  • 1/2 cup unsalted butter (1 stick), at room temperature
  • 1 egg
