Strawberry Avocado Kale Salad!

Strawberries and Avocados are a delicious match for a healthy and filling main course dinner or lunch salad!  This easy dinner salad is perfect for the spring and summer.  It is refreshing and light and the lemon vinaigrette recipe can be used on so many other salads and grilled veggies!  What I love most about this salad is that it taste good, while keeping your fitness and health goals on track!  Just add chicken or fish to complete this healthy weeknight meal! 
 

Lighter Chicken Marsala Whole Wheat Pizza!

Two of my favorite foods collided the first time I tasted Chicken Marsala Pizza, so the inevitable happened…I had to lighten it up! I lightened up the sauce and switched to whole wheat pizza crust and the results were amazing!! This is the perfect main course pizza for a large crowd or a casual dinner party.

Detox Salad -- Cilantro, Parsley, Pistachio and Tart Cherry Couscous!!!

I have put together a detox salad with some of my favorite detox ingredients. If you follow my recipes, it is no secret I am obsessed with cilantro. For one, I love the flavor, but secondly I love its healing and detox powers. A parsley and cilantro detox protects against the accumulation of heavy metals in the bloodstream and organs. Heavy metals have been linked to cancer, heart disease, emotional instability, cognitive decline, kidney and lung disease, and degenerative bone conditions.

Cilantro helps improve digestion and guards against the onslaught of free radicals that hasten aging and promote disease. Parsley is a natural blood sugar balancer, protects against insulin resistance and also acts as a natural diuretic without lowering potassium levels.

In this salad you will also find pistachios and tart cherries.  Pistachios are high in antioxidants such as vitamins A and E. Pistachios are also an incredibly rich source of vitamin B6. The consumption of raw pistachios has been linked to better heart healthy, more oxygen in the blood, healthy nervous system, immune system, and skin health.

Tart cherries have a great preventative healing power due to their high level of antioxidants. They have also may been linked to cancer prevention and aide with arthritis inflammation because of the two anti-inflammatory compounds, anthocyanins and quercetin that they carry.

Pear & Chicken Potstickers!

I love any recipe that is Asian influenced. I would like to think I incorporate all of my favorite flavors in every recipe that I create. These potstickers are different, delicious and soooo healthy! I used roast chicken breast that I made on a Sunday, instead of ground chicken; because that is what I had on hand...but you can use whatever you have! What is great about this recipe is you can make a large bunch and freeze what you are not serving that night. Perfect as an appetizer at a cocktail party or served with rice and soup for dinner -- these potstickers are worth the work (its not really that much work)!

White Bean & Salsa Verde Baked Empanadas!

Here is a great recipe to add to your Meatless Monday Menu! Creamy white bean, spicy salsa verde, garlic and a crust made with coconut oil...(thanks to wholefoods.com for the crust recipe). Delicious can be healthy! Double the recipe and make these empanadas in large batches to be frozen for later! They will last in the freezer for up to 4 weeks and maintain freshness. In this recipe I do not include cheese, but some queso fresco would be a yummy option! Enjoy! XO Jessica
